I want to add a few more things to peter's excellent article. Sinking your rail with your back foot works while planing as well, easily adding a few degrees of upwind pointing. It also lets you get away with a smaller fin, since the rail adds traction you normally get from riding a larger fin. Tack whenever you can, if you can't tack, a tight non planing jibe is better for holding ground than a fast, wide arcing jibe that you can plane through.
